This cheese is made by expert cheesemakers according to traditional recipes, with raw cow's milk and artisanal methods altogether. According to legend, the cheese was transported from the huts in the city on the backs of mules, and hence the particular form that today we decided to catch up. Great are its aromatic complexity with hints of flowers and herbs of the mountains, and its persistence.
