The term derives from the greek (from " πας " ( all) and " χειρ " (hand) ) in the first founders of Parthenope and still used in Italian as " slap " or open hand slap given no hostile intentions . Hence the name of the type of pasta, the size much higher than normal , usually accompanied by succulent sauces . The paccheri can also be stuffed , cheese or other ingredients, and served with the sauce .


 

In 2010 Gragnano pasta got the brand of Protected Geographical Indication (IGP) , the first Community recognition of quality awarded in Italy. To achieve this goal - a tribute to the wisdom of many pasta masters who for centuries have invested in quality.

According to the provisions of the Official Gazette no. 198 of 25 August 2010, which governs the protected geographical indication , the " Gragnano pasta " is the product obtained from mixing of durum wheat with pure water from the aquifer of Monti Lattari , with a particular aroma of grain ripe fruity flavor and a distinctive , strong flavor . Gragnano pasta is characterized by a wrinkled appearance , typical of bronze drawing , and cooking shows is firm and elastic , with excellent and long-lasting .
